AmaBlu® Blue Cheese

America’s first Blue cheese is cave-aged for a minimum of 75 days making it a creamy and delicious addition to steaks and hamburgers fresh off the grill.

AmaGorg® Gorgonzola

Cave aging for a minimum of 90 days gives our AmaGorg® Gorgonzola a sweet flavor profile that pairs well with wine, chicken, or on a cheeseboard with dried fruit and nuts.

Cave aged for 100+ days, St. Pete’s Select® Blue Cheese is a full-flavored, super-premium Blue with a creamy white background, pronounced blue-green veining and a sweet, tangy, slightly peppery taste.

Felix Blue Cheese

My Personality

I'm comfortable in my own skin.

Named after the founder of Faribault's caves, Felix Frederiksen this Blue Cheese is made in a similar style to AmaBlu; however, we allow the sandstone caves to create a natural rind that picks up on the different microflora that inhabit the caves. The cheese is aged a minimum of 60 days. The combination of the edible (but optional) natural-rind and unique aging process creates a dense, fudgy texture with sharp, piquant complexities and a distinct rind flavor that highlights the terroir of the cave.
