We know we shared some of our favorite “Blue Cheese-y” summer recipes with you, but we also understand that summer can be a time for savoring all the fresh cheeses like mozzarella, ricotta, chevre and more.  If you quietly moved away from cooking with Blue cheese, no worries.  We are here to challenge you to fall back in love with Blue.

 

Snuggle with Soups and Stews

As the weather gets chillier, we love to snuggle with some soups and stews.  These warm dishes are the perfect way to end the day.  We gathered some of our favorite recipes from some of our favorite websites to inspire your fall soup game.  Besides our recipe for Butternut Squash with AmaBlu and Bacon featured on our recipe page, we have a couple more faves to beat those chilly fall nights.

Though we love the classic French Onion Soup, we also love Cream of Caramelized 6-Onion Soup.  This veggie soup is perfect for Meatless Monday and can be frozen for up to three months, so go ahead and double, or triple, up this recipe.  We love the rich, umami flavors of this soup with our natural-rind Felix.  But to add some texture to this fatty dish, we like to make Felix “Crisps.”  Think something like Parm Crisps, but using Felix.  Baking the Felix creates crunchy “croutons” for the soup.  Beware though, when cooked Felix becomes a bit saltier.  Don’t add more salt to the soup until you taste it with the crisps.  To act as a second garnish, we made these Melted Onions from Food 52.  They are incredibly tender and sweet and look beautiful floating in this decadent soup.

For you meat lovers, we think the recipe for Smoky Beef Stew with Blue Cheese and Chives from Sunset is for you!  This substantial stew will definitely fill you up.   We suggest using our peppery St.Pete’s Select in this recipe since it can go toe to toe with all the bold flavors in the stew.

 

Savor Winter Squash

With the squash section of produce departments in full swing, we had to share a few of our favorite squash recipes for the fall.  First up, the Winter Squash Wedges With Gorgonzola Butter and Hazelnuts from Epicurious is a delight!  Using our AmaGorg in the Gorgonzola butter will level up this dish.  We suggest you make a bit more Gorgonzola Butter since it’s great spread on bread at every meal.  Any of those soups and stews listed above would be excellent with bread and AmaGorg Butter.

Another Fall recipe we love hails from Bon AppetitSweet Potatoes with Stilton and Walnuts is a lovely side dish that will compliment many Fall-inspired main dishes.  Pork chops, steak, roasted chicken….?  Perfect side dish.  Staying away from meat?  Double up this recipe and serve as your main dish.  We suggest using our European-style, natural-rind Felix in place of the Stilton.  The dense, fudgy texture of the cheese and its sharp, piquant complexities will playfully delight your palate when combined with the candied walnuts.

 

Pumpkin Spice Latte….?

For all of you who love your pumpkin, we didn’t forget about you.  Though we might not be pairing our Blue cheese with a PSL, we do want to highlight a couple of our favorite pumpkin recipes that do play well with Blue.

A great recipe featuring pumpkin comes from delicious.  This recipe for Pumpkin with Blue Cheese and Pickled Walnut Salsa highlights crisp, seasonal apples, Blue cheese and pickled walnuts.  We suggest using the Minnesota-born honeycrisp apples and our AmaGorg to highlight the sweetness in the apples.  Another pumpkin recipe that will impress is the Pumpkin and Sage Baked Gnocchi from the same blog.  We love this so much we wrote about it in our “Spooky Halloween” blog last month as well!
