Behind every great creamery is an excellent cheesemonger selling our cheese...or should we say behind every great counter there is an excellent cheesemonger selling our cheese! In our second installment of this series, we introduce you to Cheesemonger Jennilyn Marshall.
What's your name and where do you work?
Jennilyn Marshall; I am the Delicatessen Manager as well as the Cheese Specialist and Charcuterie Specialist at the Faribault, MN Hy-Vee.
What is your background in the cheese industry?
My background in cheese was mostly learning as I went until I took over the deli department; then I was able to take the cheese certification classes that Hy-Vee offers. By the end of this year, I will be a Certified Cheese Expert.
What does the Minnesota cheese industry mean to you?
Minnesota cheesemakers have some of the tastiest and unique cheeses that I have had the opportunity to taste. I absolutely love the local cheeses from the Caves of Faribault and recommend them to everyone!
What is your favorite Caves of Faribault cheese and what do you love to pair with it? Or, alternately, do you have a favorite recipe you use our cheese in?
One of my favorite pairings of a Caves cheese is the Cherubic Gouda with Hot Pepper Jelly on a light, buttery cracker.
