Meet Your Monger - Lori Cyrus-Satter

Behind every great creamery is an excellent cheesemonger selling our cheese...or should we say behind every great counter there is an excellent cheesemonger selling our cheese!  In our fourth installment of this series, we introduce you to cheesemonger Lori Cyrus-Satter!

 

What's your name and where do you work?

My name is Lori Cyrus-Satter and I run the cheese department at Linden Hills Co-op for more than a year and a half. 

 

What is your background in the cheese industry?

 I’ve been with Twin Cities Co-op Partners for nearly 11 years.  I ran the cheese department at the Wedge Co-op for 9 years, and have been at Linden Hills Co-op for more than a year and a half.  I’ve been selling cheese at various grocery/specialty stores since 1999, when I took a part-time job selling cheese to save money for a trip to Australia.  I fell in love with cheese at that point, and there was no turning back!  After a decade in the business, I started selling cheese at local Co-ops, and fell equally in love with co-operatives' missions and dedication to forming and maintaining relationships with farmers.

 

What does the Minnesota cheese industry mean to you?

It’s been exciting to see how much the Minnesota cheese industry has changed and grown so much since then.  We have so many award winning and award deserving cheeses here in our state, and it’s thrilling to know so many of the local cheese heroes and see them thrive and be celebrated.  I grew up in a very small farming community and appreciate the connections between the land, the farmers and the products they provide society.

 

What is your favorite Caves of Faribault cheese and what do you love to pair with it? Or, alternately, do you have a favorite recipe you use our cheese in?

 My favorite Caves of Faribault cheese is definitely Felix!  I love the dense, fudgy texture, the rustic rind is beautiful and the mustiness from the caves is intoxicating.  I love smearing it on a baguette, drizzling Tondo Balsamic Glaze over it, and then enjoying it with strawberries.  It is also incredible crumbled on top of grilled peaches which have (again) been drizzled with Tondo Balsamic Glaze.
