Make 2021 a Yummy One!

When we wake up to a new year, many of us resolve to make dietary changes in the name of health. After a long holiday season consisting of sweets, cheese, beer, wine and more cheese, many people use the month of January as a time to reset. Here at Caves of Faribault, we wanted to share with you some of our favorite healthy(ish) recipes we’ve found that still incorporate our favorite food, cheese. We’re sharing some of our favorite finds on this month’s blog and will also be sharing photos of these meals featuring Caves of Faribault cheese on our Instagram!
A Salad to Swoon Over
If you are choosing a lighter fare like a salad in the name of health, you can make it exciting with cheese! There are always the classic salads that highlight Blue cheese like a Cobb or Wedge salad, but we love Beet salads. Not only do you get a kick of natural sweetness from the beets but word on the street is beets are good for the liver! Check out this recipe for one of our favorite Beet and Blue Cheese Salads from Martha Stewart Living. If beets aren’t your thing, try this tried-and-true Cobb salad recipe from The Kitchn. Another way to make a salad more exciting is to dress it up with dressing! We love this recipe for Greek Yogurt Blue Cheese Dressing. It’s actually a bit dense which makes it a great dip, so if you want to use it on a salad, we suggest thinning it out with a bit of water.
Goodbye Sweets, Hello Sweet Potatoes
If you’re looking to adopt more healthy eating habits but you still have a sweet tooth, check out these spiffy spud recipe finds that incorporate highly nutritious sweet potatoes and cheeses from our affinage line.
