Caramelized Onion Dip
made with St.Helga's Swiss
Ingredients
- 4 large sweet onions
- 2 tablespoons unsalted butter
- 8 oz St. Helga’s Swiss, shredded
- 8 oz Prairie Farms Cream Cheese, softened
- 1 cup sour cream
- 1 tsp Old Bay seasoning
- ½ cup crispy fried onions (such as French’s)
- Kosher Salt
- Black Pepper
Directions
Caramelized Onions
- Thinly slice onions. This will look like a lot of onion, but they will cook down!
- Heat the butter in a cast iron and stainless steel pan over medium heat. Add enough onions to form a single layer. Allow the onions to cook down for about 1-2 minutes before adding another layer. Continue until all the onions are in the pan. Season with a bit of salt.
- Reduce heat to low. Continue cooking, stirring occasionally. For this dip, we want the onions to be dark, golden-brown and heavily caramelized. This will take about an hour. If you find the onions are sticking, add a bit of water and loosen them with a wooden spoon. In the last 15 minutes of cooking, watch carefully so they don’t burn (this will happen quickly!) Remove from heat and let cool.
- Alternatively, you can add the onions and butter to a crockpot and cook on low for about 9-10 hours, stirring every couple of hours or so.
The Dip
- Take the caramelized onions and gently chop in a food processor. You should have about 1 cup of onions for the dip.
- Preheat the oven to 350 and lightly spray a baking dish with avocado oil (or any other vegetable oil).
- Mix together the cream cheese, St. Helga’s Swiss, sour cream, chopped caramelized onions and Old Bay seasoning.
- Spoon the mixture into your pre-sprayed baking dish. Bake for about 20 minutes. Remove from the oven, sprinkle with fried onions, and broil on low for about 4 minutes, until the fried onions are crisp.
- Allow to cool for about 5 minutes and serve with potato chips or your favorite chip, vegetable or bread.
